These Perfect O’Henry Bars {Gluten free & Dairy Free} are so delicious! Definitely not your average granola bar. Gluten-free oats coated with butter and sugar, baked to perfection then topped with melted chocolate and peanut butter.

Ingredients
  

  • 4 Cups Gluten-Free Quick Oats
  • 1 Cup Brown Sugar
  • 1/2 Cup White Sugar
  • 1 Cup Unsalted Butter
  • 1 1/4 Cup Dairy-Free Chocolate Chips
  • 3/4 Cup Creamy Peanut Butter

Instructions
 

  • Preheat oven to 350F and line 9x13 baking dish with parchment paper.
  • To a large mixing bowl combine the gluten-free oats, white sugar and brown sugar stir until well combined. Being careful to break up any clumps in the brown sugar.
  • To a microwave safe bowl, add the butter and belt in microwave. Slowly add to oat and sugar mixture and stir until well combined.
  • Pour the mixture into a lined baking dish and bake at 350F for 12 minutes or until edges are brown and bubbly.
  • To a medium saucepan add the chocolate and peanut butter. Cook on low until all the chocolate is melted and the mixture is smooth and creamy.
  • Once bars are done baking, let cool for ~10 minutes. Then generously pour the chocolate and peanut butter mixture over the top.
  • Chill in fridge for at least one hour before serving.
