These Perfect O’Henry Bars {Gluten free & Dairy Free} are so delicious! Definitely not your average granola bar. Gluten-free oats coated with butter and sugar, baked to perfection then topped with melted chocolate and peanut butter.
Preheat oven to 350F and line 9x13 baking dish with parchment paper.
To a large mixing bowl combine the gluten-free oats, white sugar and brown sugar stir until well combined. Being careful to break up any clumps in the brown sugar.
To a microwave safe bowl, add the butter and belt in microwave. Slowly add to oat and sugar mixture and stir until well combined.
Pour the mixture into a lined baking dish and bake at 350F for 12 minutes or until edges are brown and bubbly.
To a medium saucepan add the chocolate and peanut butter. Cook on low until all the chocolate is melted and the mixture is smooth and creamy.
Once bars are done baking, let cool for ~10 minutes. Then generously pour the chocolate and peanut butter mixture over the top.
Chill in fridge for at least one hour before serving.
